  • 350g penne pasta

Instructions:

  1. Bring a pot of water to a boil. Salt generously and cook pasta until al dente.
  2. In a large skillet, heat olive oil over medium. Sautรฉ onion until translucent. Add garlic and cook 1 minute.
  3. Add eggplant and season with salt. Cook 10-12 minutes until softened and browned.
  4. Stir in diced tomatoes, tomato paste and basil. Simmer 15 minutes.
  5. Drain pasta and add to sauce. Toss to coat. Remove from heat and stir in parmesan.
