Ingredients:

  • Chicken broth (low sodium) – 100 calories per cup
  • Ditalini pasta – 170 calories per 1/2 cup
  • Spinach – 7 calories per cup
  • Shredded carrots – 25 calories per 1/4 cup
  • Green onions – 5 calories per tablespoon
  • Parmesan cheese – 70 calories per tablespoon

Instructions:

  1. 🥘 In a large pot, bring the chicken broth to a boil. Add the ditalini pasta and cook for 8-10 minutes, until al dente.
  2. 🥘 Stir in the spinach, carrots and green onions. Cook for 2 more minutes until spinach is wilted.
  3. 🥘 Ladle soup into bowls and top with Parmesan cheese.
