🥘 Persian Jeweled Rice Pilaf

This colorful Basmati rice dish is iconic in Iranian cuisine. The sweet and tangy dried fruits and nuts create jewel-like pockets of flavor throughout each bite.

Ingredients:

  1. 1 cup Basmati rice🍚
  2. 1/4 cup golden raisins🍇
  3. 1/4 cup chopped dried apricots🍑
  4. 2 tbsp shelled pistachios, chopped🥜
  5. 1 tbsp butter or olive oil🥗
  6. 1 onion, diced🧅
  7. 1 clove garlic, minced🧄
  8. 1 1/2 cups chicken or vegetable broth🍲
  9. 1/4 tsp saffron threads🌹
  10. Salt and black pepper to taste🧂

Instructions:

  1. Rinse the rice in a strainer until the water runs clear. Set aside to drain.
  2. In a saucepan, melt the butter over medium heat. Sauté the onion for 5 minutes until translucent.
  3. Add the rice and garlic. Cook, stirring frequently, for 2 more minutes.
  4. Stir in the broth, saffron threads, raisins, apricots and pistachios. Bring to a boil.
  5. Reduce heat to low, cover and simmer for 20 minutes, until rice is tender and liquid is absorbed.
  6. Season with salt and pepper. Fluff with a fork before serving.
