Trinidad & Tobago Callaloo Stew 🇹🇹
Ingredients:
- 1 bunch callaloo or spinach, chopped 🥬
- 1 onion, diced 🧅
- 3 cloves garlic, minced 🧄
- 1 tbsp ginger, grated 🧅
- 1 can coconut milk 🥥
- 1 cup vegetable or chicken broth 🍲
- 1/2 tsp turmeric 🟡
- 1/4 tsp cayenne pepper 🌶️
- Salt to taste 🧂
Instructions:
- In a large pot, sauté onion and garlic until softened. 🍳
- Add callaloo/spinach and cook for 2-3 minutes until wilted. 🥬
- Pour in coconut milk, broth and seasonings. Bring to a boil. 🫖
- Reduce heat and simmer 20 minutes, until callaloo is very tender. 🥣
- Serve warm over rice or enjoy on its own. Garnish with lime if desired. 🍛
