Ingredients:

  • 1 bunch callaloo or spinach, chopped 🥬
  • 1 onion, diced 🧅
  • 3 cloves garlic, minced 🧄
  • 1 tbsp ginger, grated 🧅
  • 1 can coconut milk 🥥
  • 1 cup vegetable or chicken broth 🍲
  • 1/2 tsp turmeric 🟡
  • 1/4 tsp cayenne pepper 🌶️
  • Salt to taste 🧂

Instructions:

  1. In a large pot, sauté onion and garlic until softened. 🍳
  2. Add callaloo/spinach and cook for 2-3 minutes until wilted. 🥬
  3. Pour in coconut milk, broth and seasonings. Bring to a boil. 🫖
  4. Reduce heat and simmer 20 minutes, until callaloo is very tender. 🥣
  5. Serve warm over rice or enjoy on its own. Garnish with lime if desired. 🍛
